You may need to completely avoid these foods which may raise uric acid levels:
* Brains
* Kidney
* Broths, gravies
* Sardines, anchovies
* Liver
* Sweetbreads
You can drink coffee and tea. However, talk to your doctor about drinking alcohol. Too much alcohol may raise your uric acid level and bring on a gout episode. Drink at least 10-12 eight-ounce glasses of non-alcoholic fluids daily, especially if you have had kidney stones. This will help flush the uric acid crystals out of your body.
here are many myths about diet and gout. Here are the facts:
1. Obesity can be linked to high uric acid levels in the blood. If you are overweight, work with your doctor to develop a weight-loss program. Don't fast or try to diet too severely because that can raise your uric acid level and make the gout worse. If you are not overweight, watch your diet carefully so you don't become overweight.
2. Usually you can eat what you like within limits. If you have kidney stones due to uric acid, you may need to avoid or limit foods that raise your uric acid level, such as those listed below. Talk to your doctor about what foods you may have to avoid.
Uric acid is a waste of protein metabolism. It is also present in large quantities in some foods. It causes problems because humans do not possess the enzyme to digest it to a soluble form. When uric acid precipitates it can cause kidney stones or gout. Gout is a problem where uric acid crystals deposit in the joints, causing a painful inflammatory response.
Like any stone, uric acid stones form when too much uric acid is present in the urine to remain dissolved. Uric acid stones form quickly as there are no known inhibitors in human urine to cope with fluctuation in output. A short period of dehydration in a susceptible individual is enough to begin stone formation. A sudden uric acid load from food can also precipitate a new stone. This means that what you eat and drink directly affects your chance of developing stone.

Excess serum uric acid itself isn't a disease and is a by-product of purine metabolism and an end-product of protein metabolism. Elevated serum uric acid depends on renal function, purine metabolosim rate and dietary intake of purine foods. Besides a high intake of purine foods, there are a great number of conditions that elevate levels. I won't list these because A. there are too many and B. they may not apply to you.
Serum uric acid levels can be lowered with the medications allopurinol (Zyloprim), colchicine, probenecid and sulfinpyrazone (Anturane).
Dietary changes will affect serum levels by avoiding foods high in purines, such as sweetbreads, anchovies, sardines, liver, beef kidneys, brains, herring, mackerel, scallops, game meats and gravy. Foods that have a moderate amount of purines are beef, pork, fish & seafood, asparagus, cauliflower, spinach, mushrooms, green peas, lentils, bean, oatmeal, wheat bran and wheat germ. Alcohol only indirectly increases uric acids levels. What it does is interfere with the body's removal of uric acid. An adequate daily water intake is also helpful.
And we don't need an enzyme to digest uric acid. It is an end-product. Excess is normally excreted in urine.
