swollen and painful calves and feet.
knee swelling and pain.
sleep apnea.

lack of oxygen to the brain (it seems as if he has lost his smarts and it gets worse the more time goes by).

Weight gain and his belly button is popped out (he is an inny).

Sounds like diabetic symptoms to me. My son in laws grandfather had the same symptoms and he was diagnosed with diabetes. The longer you take to get it under control the harder it is. Please find a way to have his blood tested!

I really don't want to alarm you I'm terribly sorry to hear about you father but he is in VERY bad shape. A family member is in the health field and they said your dad more than likely has congestive heart failure. To make things worse, if he doesn't see a doctor, he may have impacts to his limbs.
Although you indicated he has no interest in seeing a doctor, perhaps he is not interested in seeing an MD (allopathic doctor). Ask if he would be willing to see a Naturopathic or Homeopathic doctor. Naturopathic doctors (ND) do such amazing things and without all of the prescribed drugs. ND's cure the route or cause of the problem rather than solely the symptoms. The right ND might even be willing to make a house-call. However, if your dad's case becomes urgent, you should call an ambulance or take him to the ER.

You have done your own research well. What I will say, as a health care professional, is that he does not have much longer to live if he does not seek medical counsel soon.
You and your mother need to talk to him reasonably. Does he want for you and the family to suffer because of his refusal to take responsibility for his health? Does he feel that it is a loving thing for him to do as a father and husband to put you all through this stress? Does he realize that although there may be a complex reason for his symptoms that they may be EASILY treatable and the longer he waits the smaller those chances get?
The final option is to have him forcibly taken to have a mental evaluation. An adult that is this sick may need extra care.

Your DAD might have Anasarca - a condition in which there is volume overload and edema all over the body . Common causes being heart failure , nephropathy , liver disease - commonly seen in obese , diabetic , hypertensives and alcoholics or cirrhotics . Needs control of underlying condition and diuretics , its not very difficult to treat this. Seems like Dad has given up and so has some family members - you guys need to take him to ER or a medical doctor not to a naturalist , homeopathic or astrologist .
