I've read that shrimp and scallops are worse, but how much? If tend to use half as much of them as I would chicken, does it offset the difference?

Red meats and processed meats are the worst, as well as shellfish.
The best thing to do is ask your FIL what restrictions he has on his diet. He'll tell you what he can and can't have, but there is nothing wrong with him having a shrimp kabob as a treat if his visiting is a special occasion if his gout isn't present at the time.
